I'm currently near the end of writing a post-series fic entitled The Aftermath: Aang's Book, and one of the things I'm hearing most often is "What the f*** happened to you, Toph!?" It'll be explained later on, but I would like to see someone write a fic following Toph's life. Most of it is pretty open, but there WILL be some rules to follow, to keep it consistent with the rest of the Consequences of Our Pasts universe.
